Steve Joll's Cranzacs

Steve Joll of The Breeze Wellington's Cranzacs are famous in our capital city. But if you can't get to one of the locations selling Steve's Cranzacs, then why not try make them yourself? Take a look at the recipe below.

Cook time: 15-20 minutes
Serves: 12

INGREDIENTS:

  • 1 Cup Flour

  • 2/3 Cup Brown Sugar

  • 3/4 Cup Rolled Oats

  • 3/4 Cup Coconut

  • 1/2 tsp Cinamon

  • 1 tsp Baking powder

  • 3/4 Canberries

  • 125g Butter

  • 1 tbsp Golden syrup

  • 2 tbsp Water

  • 1/2 tsp baking soda

METHOD:

  1. Preheat the oven to 180.
  2. In a bowl, combine the flour, brown sugar, rolled oats, coconut, cinamon, baking powder and cranberries.
  3. Using a pot on the stovetop, melt the golden syrup and butter. Remove from heat.
  4. Add the water and baking soda, mixing as you go.
  5. Add the dry ingredients into the wet ingredients, combining the mixture until it comes together.
  6. Scoop out cookie sized scoops onto a lined baking tray and then pop in the oven for 15-20 minutes on 180 degrees.
  7. Enjoy with a cup of tea!
