To celebrate 'Whitebait Season' Ali decided to her own version of whitebait fritters, with a bit of a twist.
- 1 egg beaten
- 2 1/2 Tbsp plain flour/gluten free flour
- 2 Tbsp Milk
- 3 Tbsp Grated Cheese
- salt & pepper
- tsp of Poppy seeds
- 1 potato peeled & grated
- 1 tsp baking powder
Add flour,milk,cheese and S & P & poppy seeds to the beaten egg and put in fridge for 10 mins
Add the grated potato to the batter (make sure you squeeze juice out of potato to make sure it's crisp) and the baking powder just before you cook the patties.
Heat the oil in pan and drop n Tablespoons of the mixture.
Cook for a couple of minutes either side till golden.
You can drain on paper towels and serve warm or you can double or triple the batch and keep warm in the oven on 100 .
