Ali's pumpkin soup with a twist

Ali's kitchen
  • 2 onions chopped 
  • 2 cloves garlic chopped
  • 2-3 T butter and or oil
  • 1/2 tsp curry powder 
  • 1/2 tsp ground coriander seed
  • 1/8 -1/2 tsp chilli powder(depends how much zing you like)
  • 300gms Kunara peeled & diced 
  • 400gms pumpkin peeled & diced 
  • 4 1/2 cups chicken stock
  • 1 tsp salt
  • 2 Tbsp Peanut Butter (secret weapon! )

Cook onion and garlic over a low heat in good size pot till onion transparent . Add curry powder coriander and chilli (go easy on the chilli if this is your first attempt, can always change next time)stir for s minute then add kumara pumpkin with stock and bring to boil. Simmer till tender . Add salt and peanut butter . Purée in blender or processor or masher 

Adjust seasoning to your liking but you probably won't have to. 

Serve with what ever you like. Swirl of plain unsweetened yoghurt?  Coconut cream ? How about a few chopped roast peanuts?
