Smash Burgers with Sweet & Spicy Pickle Mayo

For NZ burger day, Ali got in some practice with a recipe idea from NZ Beef + Lamb. She loved the double hit of the burger patties and the sauce that she could eat a spoonful! 

Ingredients for Smash Burgers

  • 800g Beef mince
  • Salt
  • 2 tbsp vegetable oil
  • Ground black pepper
  • 8 slices of cheese
  • 4 brioche burger buns - halved and toasted with butter
  • lettuce
  • 2 tomatoes
  • 1 red onion

Ingredients for Burger Sauce

  • ½ cup mayonnaise
  • 10 McClure's Sweet & Spicy Pickles
  • 2 tsp American mustard
  • 1 tbsp tomato sauce
  • 1 tbsp brine - from McClure's Sweet & Spicy Pickles
  • ½ tsp garlic powder
  • ½ onion powder
  • ½ smoked paprika
  • pinch of salt


  • Mix all the ingredients for the burger sauce and place in the fridge for at least 30 minutes
  • Divide the mince into 8 portions and season each patty with salt and pepper
  • Heat a pan or a BBQ hot plate until very hot. Lightly oil the pan
  • Place portions of meat in the pan and use a spatula to press down firmly to flatten
  • Flip the patty when you see the meat browing really well - usually a minute or two
  • Place a slice of cheese over each patty and cook for a further minute

To assemble the Smash Burgers

  • Spread one half of the toasted bun with the burger sauce
  • Place lettuce leaves and sliced tomatoes on the bottom bun
  • Top with two burger patties
  • Finish with sliced red onion and extra pickles
