Ali here! I made this on a rainy windy Sunday with what was available in the fridge/freezer. It's so good if you can't be bothered with pastry and this is just a guideline. Definitely need the flour, eggs, and milk mixture to make it happen.
I served it with some homemade pickles, but any chutney would be nice. Enjoy!
Ingredients
- 4 eggs
- 1 ½ cup milk
- ½ cup self-raising flour
- 3 cups Frozen Vegetables
- 1 cup grated cheese
- ½ cup diced ham (leave out if need be)
- thinly sliced red onion(or other preferred onions - spring, etc)
- Little tomatoes to decorate (Optional)
Method
- Preheat oven to 160C.
- In a separate bowl, beat the eggs, milk and flour together.
- Put the frozen vegetables into a pie dish and sprinkle over the cheese, onions and ham (if you are using). Top it off with the little tomatoes (optional).
- Pour the egg mixture over.
- Bake in the oven for 45 - 55 minutes or until firm when touched.
- Serve with some pickles or chutney and/or bread
