Ali's Marrow and Pecan cake

When your zucchinis get away on you and you end up with marrows, this is something a bit different to make. Very tasty and moist!

Ingredients for the cake:

  • 250 milliliters of cooking oil 
  • 300 grams self-raising flour
  • 3 teaspoon of mixed spice 
  • 1/2 teaspoon baking powder 
  • 250 grams of brown sugar
  • 4 large eggs 
  • Zest and juice of an orange
  • 300 grams of marrow grated
  • 200 grams of pecans (or walnuts) 

Ingredients for the icing:

  • 50 grams of butter
  • 100 grams of cream cheese
  • 1 cup of icing sugar
  • 4 tablespoons of maple syrup


  1. Heat the oven to 160°C. Line a 22 centimeter round springform cake tin.
  2. Sift the flour, mixed spice & baking powder into a big bowl. Add sugar and stir it.
  3. In a separate bowl beat the eggs with the orange zest and juice. Then pour in the oil. Add this to the flour mix.
  4. Now add the grated marrow and 150 grams of the nuts (roughly chopped) to the recent mix and stir it till it's combined. Pour the mixture into the cake tin. 
  5. Bake for about 1 hour 20 mins or until a skewer comes out clean. Leave to cool before removing and icing 
  6. While the cake cools make the icing by beating the ingredients together 
  7. Once iced decorate with the rest of the nuts
