Ali has been in the kitchen again, this time whipping a delicious orange polenta cake!
"When life gives you oranges, make cake! Surprisingly good. I like it best warm but it is just fine cold too. Maybe warm with a nice ice cream (Lemon flavour?) Or a nice Greek yoghurt."

Ingredients:
For the cake
- 250g butter
- 250g castor sugar
- 4 eggs
- 140g Polenta
- 200g plain flour
- 2 tsp baking powder
- Zest and juice of 2 oranges (save 100mls for the glaze)
For the glaze
- 100mls of orange juice
- 100gms castor sugar
Method:
- Heat oven to 160c
- Line 21cm cake tin
- Cream butter and sugar until light and fluffy. Add the eggs one at a time and mix well. Add all dry ingredients and the zest and juice.
- Put the cake mix in the tin. Spread it evenly and bake for about 45 minutes or until a skewer inserted into the cake comes out clean. Remove from oven and leave on a rack to cool.
- Make the glaze by putting the juice and sugar in a saucepan and bring to the boil. Let it simmer for a few mins and remove from heat . Allow to cool a little and then drizzle of the cake.
