Ali Leonard shares her favourite recipe for Rhubarb Chutney

"I have some out of control rhubarb at the moment, so I made chutney. It’s so good. Always nice to have a little something on the side!: - Ali Leonard.


  • 500 gms of chopped rhubarb (about 1cm chunks) 
  • 500 gms of onions peeled and diced
  • 1 cup of vinegar (I prefer spiced but what ever you have ) 
  • 3 cups of raw sugar
  • 1 tsp of cinnamon 
  • 1/2 tsp ground cloves
  • 1/2 tsp of chilli powder
  • 1 cup of raisins or sultanas 
  • 2 tsp of salt 

Put it all in your  preserving pan or BIG saucepan. Bring it to the boil and then reduce heat to simmer until it’s thick (approx 30-40 mins) put into hot jars and seal.
