Carrot and Beetroot salad

A quick and easy salad to whip up for summer! Pair it alongside any meat at a BBQ! 

Prep time: 10 minutes
Serves: 5

Ingredients

  • 3 Grated carrots
  • 1 Tin Baby Beetroot
  • 1/4 Cup of Pumpkin Seeds
  • 1/4 Cup of Sunflower Seeds
  • Chopped Mint
  • Feta to Garnish

Dressing

  • 1/4 Cup Orange Juice 
  • 1/4 Cup Balsamic Vinegar
  • 1/4 Cup Olive Oil
  • 1/4 Teaspoon Dijon Mustard

Method

Grate Carrots and place in bowl,

Chop tinned Baby Beetroot and add to Carrot.

Add Sunflower and Pumpkin seeds to the mix

Add Chopped mint to the bowl and mix.

For the dressing, add Orange Juice, Balsamic, Oil and Mustard together and stir. 

Drizzle dressing over the salad and serve!
