This recipe is the perfect salad coming into Summer, it's healthy too!
Prep time: 20 minutes
- 1 Broccoli
- 1 Cauliflower
- 2 Carrots
- Handful of Spinach
- 1 Celery
- 1/4 cup Sunflower Seeds
- 1/4 cup Pumpkin Seeds
- 1/4 cup Almonds
- 1/4 cup Diced Apricots
- Salt and Pepper
- 2 tbsp Lemon Juice
- 1/3 cup of Mayonnaise
Blitz the Carrot, Broccoli and Cauliflower in a food processor
Put in bowl and add Spinach and mix
Then add chopped Celery, Sunflower seeds, Pumpkin seeds, and Almonds.
For the dressing, combine Lemon juice and Mayo.
Pour over salad and mix.
Serve the Salad by itself or with a meal!
