A delicious Asparagus Tart recipe with only 3 ingredients! This is a perfect easy dinner or snack! Alternatively try the second recipe which is more complex.

Cool time: 25-30 mins at 180C
- 2 Sheets Puff Pastry, Thawed
- 225grams of Grated Parmesan Cheese
- 450 grams of Asparagus with the Woody Ends Removed
Preheat oven to 210 C. Place the puff pastry on a baking sheet.
Sprinkle cheese all over the puff pastry sheets.
Line up the asparagus on top of the cheese.
Place in the oven and bake for 25 to 35 minutes, or until golden brown puffy.
When you remove the sheet, the pastry will be super puffy. It may deflate but it's still delicious!
Slice it into squares and serve.
You can add salt and pepper if you feel that you need it, but the cheese usually has enough flavor
- 1 tablespoon Olive oil
- 2 Onions, finely sliced
- 1 tablespoon Brown sugar
- 2 teaspoons White wine vinegar
- 2 sheets Puff pastry, thawed
- 2 bunches Asparagus, trimmed and blanched
- 125g of Cream Cheese, softened
- 1/2 cup Sour cream
- 2 eggs
- Salt & Pepper
- 1/2 cup shaved Parmesan
Heat oil in a large heavy based frying pan.
Cook onions over a low heat for 5-10 minutes until softened. Then Add sugar and vinegar, cook a further 5 minutes.
Press pastry into the base of a lightly oiled 33 x 9 cm rectangular fluted pan with removable base. Pastry will need to overlap slightly and be trimmed to fit.
Spread onions over the pastry base and top with asparagus spears.
Whisk the Cream cheese , sour cream, eggs and seasoning until smooth.
Pour over the asparagus and bake at 200ºC fan-forced for 20 minutes until golden and cooked through.
Serve topped with shavings of Parmesan and salad.
