The guacamole trick you won't want to live without

Must See 17/09/2018

With summer on its way and avocados finally dropping below $5 each at supermarkets, it's time to break out that all-time Mexican crowd pleaser; chips and guac.

But one expert says there are some mistakes too many of us are making when smashing up our guacamole.

Eduardo Gomez, founder of UK festival 'Tequila and Mezcal' revealed his top tips for perfect guacamole to the Daily Mail, in honour of International Guacamole Day (September 16).

Gomez says one of the biggest mistakes people make is substituting lemon juice for lime.

He also says a Thai green chilli should be used for "guacamole with a bit of a kick".

"The most important thing is to use the freshest ingredients possible and the avocados have to be perfectly ripe, not super soft but not too hard either."

Controversially, Gomez recommends you ditch the fork, using a blender or mixer to get the perfect consistency.

His recipe for the perfect guacamole is below, just in time for the warmer months.

Ingredients:

  • Three ripe avocados
  • One fresh green chilli. Gomez recommends using a fresh green Thai chilli
  • Freshly squeezed juice from two limes
  • Cooking salt (to taste)
  • Coriander (as much as you like)

Method:

  1. Chop both the chili and coriander as small as you possibly can.
  2. In a medium size bowl, mash the avocado flesh with a fork, leaving a few chunks in for added texture.
  3. Then add the coriander, chilli, lime juice and salt to the mixture.
  4. Mix the ingredients together with a bigger spoon or spatula carefully so as to bind it without creating too much of paste.
  5. Taste and add more lime or salt if needed to try to find the balance of all the ingredients.
