Japanese Salmon and Zucchini Skewers

Ingredients

2 zucchini peeled length ways into thin strips

Juice of a lemon

200 gms Sliced smoked Marlborough salmon

Sushi ginger

2 limes segmented

1 line for serving

1 tsp black sesame seeds

Soy sauce for dipping


Method

Toss the zucchini ribbons in lemon juice

Cut salmon into strips about 1-2cms wide

Fold the zucchini ribbons, then fold salmon with a piece of the sushi ginger in the middle of each

Put a skewer through the middle with a segment of lime on the top . So zucchini, salmon, lime

Put on platter and sprinkle with sesame seeds

Serve with a little bowl of soy
