What's better than a delicious quiche that can't fail? This quiche is delicious for picnics, and you can customise yourself with leftover cooked mixed vegetables or your preferred meats!
Ingredients
125g ham, chopped
1 small onion, finely chopped
1 1/2 cups (180g) grated cheese
1/3 cup (50g) self-raising flour
Salt and freshly ground pepper, to season
4 eggs
1 1/2 cups (375ml) milk
Optional suggestions:
2 peeled washed grated potatoes
Handful chopped parsley
Leftover cooked mixed veggies
Replace ham with cooked chopped bacon or chicken
Finely chopped spinach 1 cup
Asparagus spears
Tomato slices for garnishing before cooking.
Method
1. Preheat oven to 200°C. Grease a 6 cup quiche dish
2. Combine ham, onion, cheese, flour, salt and pepper in a medium bowl.
3. Scatter over base of dish (or other optional ingredients). You can place sliced tomato on top before cooking.
4. Whisk eggs and milk together in a large jug and pour over mixture. Cook 30- 40 minutes or until puffed and golden. Serve warm or cold.
Tip: I usually double egg milk flour cheese if I'm adding lots of optional ingredients. This always is a pleaser at a picnic and so easy to make ahead of time. Children gobble it up unaware of all the veggies.
