Hmm, nothing beats coming home to the comforting aroma of a good winter casserole. Throw bacon in the mix and you’re home and hosed. Give this Potato Bacon and Sausage Casserole a try this weekend!
For the Potato Bacon and Sausage Casserole, you will need:
1 tbsp oil
8 large pork sausages
4 rashers of bacon cut into pieces
1 large onion
2 garlic cloves crushed
4 large potatoes peeled and thinly sliced
1/4 tsp fresh sage
1 1/4 cups vegetable stock salt and pepper
How to make Potato Bacon and Sausage Casserole:
Gently cook sausages for 5 mins until golden colour remove from pan and set aside.
Add bacon to pan and fry.
Add onion and cook through.
Add garlic and fry for another 30 sec.
Turn off heat.
Arrange 1/2 the sliced potato in bottom of slow cooker.
Add the bacon, onion and garlic mix.
Sprinkle fresh sage over the mix.
Layer remaining potato slices and then add sausages on top.
Pour stock over and cover with lid.
Cook on high for 3-4 hours or until potato is tender.
