5 Easy Summer Cocktails

Relax, put your feet up, and indulge in these easy-to-make summer cocktails. 

 

 

 

 

PIMM'S CUP

Pimms is a classic liquor that is used as the base for many different cocktails.  Feel free to play around with this one until you get the perfect Pimms -your way.

 

Ingredients: 

45ml Pimm’s

lemonade (or ginger ale, or lemon-lime soda, or a mixture of them all)

lemon slices

cucumber slices

Optional garnish: orange slice, fresh borage and/or mint leaves, apple slices, strawberry


Method:

Half fill a short tumbler with ice and an optional garnish of your choice. Add measure of Pimm’s, then top up glass with lemonade or soda. Stir gently and add additional ice if necessary. Garnish with slices of lemon and cucumber.

 

 

FALLING WATER

You can really taste the fejoa with beautiful undertones of the cucumber coming through; this is the perfect cocktail after a hard day in the sun.

 

Ingredients:

60ml Fejoa Vodka

Chi

Cucumber slices


Method:

Half fill a tall glass with ice and a few slices of cucumber. Add the measure of fejoa vodka, then top up with Chi. Stir and enjoy.

 

 

MARGARITA

Everyone has their version of the perfect Margarita and their favorite tequila to add to the equation. Here is a basic recipe to build upon so you won’t have to pick up a mix from the corner grocery.

 

Ingredients:

60ml Tequila

30ml Fresh Squeezed Lime Juice

15ml Triple Sec (or Cointreau or Grand Marnier)

Lime Wedge for Garnish

Salt for Rimming

 

Method:

Rim edge of margarita glass with salt.  Combine liquid ingredients in cocktail shaker filled two-thirds with ice.  Shake for 10 to 15 seconds.  Place ice in margarita glass.  Strain contents of shaker into margarita glass.  Garnish with lime wedge.   

 

 

PINA COLADA

Pretend that you are relaxing somewhere in the islands relaxing by the pool with this tropical drink.

 

Ingredients:

60ml light rum

180ml pineapple juice

60ml canned coconut cream*

1 pineapple spear for garnish


Method:

Fill a cocktail shaker two-thirds full of ice cubes. Pour in the rum, pineapple juice and coconut cream and shake well. Strain into an ice-filled tall tumbler. Add the pineapple spear. 

 

*If you love the coconut flavor, you can add up to 1 Tbs. more of canned coconut cream - just make sure you don't overdo it or the coconut will take over completely!

 

 

BOURBON SMASH

Ditch your classic bourbon and coke for something light and refreshing, trust us, you won't be going back!

 

Ingredients 

60ml Bourbon

20ml Simple Syrup

Juice of half a lemon

3 Lemon Wedges

Pinch of Mint (10-12 leaves)

 

Method

Muddle the lemon wedges, mint, and simple syrup in a cocktail shaker. Add remaining ingredients. Shake with ice and strain over fresh ice into a short tumbler. Garnish with a mint sprig.
