Recipe: Blue Cheese & Broccoli Quiche


You might think that blue cheese is only for the die-hard cheese fans out there but you would be very wrong! If you have tried it on its on and wrinkled your nose up at the taste, then you wouldn't be alone. But I am here to get you to try it one more time in this Quiche recipe.


I have discovered that blue cheese in amongst other ingredients is incredible. I am now an avid fan of blue cheese dipping sauce and salivate at the flavours all week! So I hope this Broccoli and Blue Cheese Quiche is going to work just as well...fingers crossed!



230g ready-made shortcrust pastry

30g blue cheese (try Kapiti Blue)

1/2 cup cream cheese

3/4 cup milk

3 eggs, beaten

Salt and pepper

1 head broccoli, washed and chopped



1. Preheat the oven to 200 degrees C and roll out the pastry. Line a pie dish with the pastry, prick it with a fork and bake it blind in the preheated oven for about 10 minutes.


2. Meanwhile, in a bowl, mash together the cheeses, add the milk and mix well. Then add the eggs and beat, either by hand or with an electric food processor. Season with salt and pepper.


3. Par-boil the broccoli for about 3 minutes, then drain well and spread out on the pastry base. Reduce the oven heat to 190 degrees, pour the milk and cheese mixture over the broccoli and pastry and bake in the oven for 30 minutes, or until set.


4. Serve hot with salad, or in a big edge on its on with a glass of chilled Sav...perfect.
