Passionfruit Slice Recipe

 

For those times when a cup of tea or coffee is just not good enough on its own, try this delicious Passionfruit Slice recipe. Sweet and crunchy, its everything you want a slice to be!

 

INGREDIENTS

1 cup self-raising flour

1 cup dessicated coconut

1/2 cup caster sugar

125g butter melted

PASSIONFRUIT TOPPING

395g can condensed milk

1/2 cup strained fresh lemon juice

1/3 cup passionfruit pulp

 

 

DIRECTIONS

Preheat oven to 180 degrees C and grease an 18cm x 28cm slice pan. Line the base and sides with baking paper.

 

Combine the flour, coconut and sugar in a bowl. Stir in the butter and mix well, then press the mixture evenly over the base of the prepared pan. Bake for 15 minutes or until lightly browned.

 

For the passionfruit topping, combine the condensed milk, lemon juice and passionfruit in a medium bowl. Beat with a wooden spoon until smooth and pour the mixture over the hot base. Bake for another 15 minutes or until just set.


Cool in the pan, cut into pieces once cooled and serve.
