The Christmas season is well and truly in full swing, and while Christmas is a time for family, reflecting on the year and looking forward to what's to come, Christmas in New Zealand is often a time for a lot of food!
An Instagram baker's recipe festive recipe for a quick, easy gingerbread dessert has gone viral for all the right reasons.
The dessert is perfect for this time of year and caters to wide range of food preferences - with quick swaps to the recipe it can be made vegeterian, vegan and gluten-free.

Get the recipe below! (serves one)
- 4 tbsp self raising flour (or plain with 1/2 tsp baking powder)
- 3 tbsp any milk
- 1 tbsp margarine
- 1 tbsp golden or maple syrup (plus extra for serving)
- 2 tbsp boiling water
- 1 tsp ground ginger
Mix flour, margarine, milk, syrup and ginger together with a spoon in a mug until smooth and creamy.
Spoon 2 tbsp boiling water straight from the kettle on top of the mixture (do not stir it in).
Cover the top of the mug with a plate and microwave on high for two minutes.
Remove the cake from the mug and drizzle over extra syrup.
