Simple two-minute gingerbread dessert recipe goes viral


The Christmas season is well and truly in full swing, and while Christmas is a time for family, reflecting on the year and looking forward to what's to come, Christmas in New Zealand is often a time for a lot of food!

An Instagram baker's recipe festive recipe for a quick, easy gingerbread dessert has gone viral for all the right reasons.

The dessert is perfect for this time of year and caters to wide range of food preferences - with quick swaps to the recipe it can be made vegeterian, vegan and gluten-free.

"Steamed gingerbread pudding. Two minutes. Healthy. Made in a mug. Vegan. And gluten free!" the Instagrammer captioned thepost.

  • 4 tbsp self raising flour (or plain with 1/2 tsp baking powder)
  • 3 tbsp any milk
  • 1 tbsp margarine
  • 1 tbsp golden or maple syrup (plus extra for serving)
  • 2 tbsp boiling water
  • 1 tsp ground ginger


Mix flour, margarine, milk, syrup and ginger together with a spoon in a mug until smooth and creamy.

Spoon 2 tbsp boiling water straight from the kettle on top of the mixture (do not stir it in).

Cover the top of the mug with a plate and microwave on high for two minutes.

Remove the cake from the mug and drizzle over extra syrup.
