How to whip up an easy side o' salmon for a crowd

1 side of Salmon (I'm a food snob when it comes to Salmon and prefer Marlborough Salmon) if you are entertaining a side is a great way to feed a group otherwise a smaller piece is fine for a couple of people
1 finely crushed clove of garlic
2 T olive oil
Sea salt flakes
Dill
A lemon cut into 6-8 wedges

Heat oven to 180c
Line your tray with baking paper,place salmon skin side down
Rub the olive oil mixed with garlic over the Salmon
Scatter with Dill and add the lemon wedges
Bake 20-30 mins depending if you want a medium rare or medium
Test the thickest part of fish ,it should flake and you'll see how well done it is
Allow to rest for ten mins if serving warm or allow to cool if you are cooking for a crowd,while you get on with the rest of the meal
Baking paper is best doubled and that will help you lift and slide onto serving platter
