This morning Ali came into The Breeze studio excited about her new Halloumi salad recipe, and we have to admit it looks pretty darn good!
It also got us thinking, how delicious is halloumi as an ingredient? The "squeaky cheese" is full of flavour and super versatile.

Bulgar Wheat Salad with Grilled Halloumi Cheese
Don't be afraid of preparing this. Very easy and part of my "Meatless Monday" repertoire.
This is a good amount for 2 people. Double it if you fancy.
1/2 cup of Bulgar Wheat
1/2 a red onion finely diced
2 tomatoes diced
1/4 cup of mint leaves chopped
1/4 cup of parsley chopped
juice from 1 lemon
Lettuce leaves to put the salad on ( I like cos)
1/2 cup of plain Greek Yoghurt
salt and pepper
zest from 1 lemon
Halloumi cheese cut in 1 centimetre thick slices
Put the Bulgar wheat in a pot and cover with boiling water ,put lid on and leave for about 10 mins.
drain off any excess liquid at the end of the time.
add remaining salad ingredients and place on top of lettuce leaves to serve on individual plates
Put the halloumi slices in a pan to brown and place on top of the salad . serve with the yoghurt mix of yoghurt and the lemon zest and seasoning on the side and a slice of lemon if you like and add toasted pine nuts. Yum!
