Jeanette from our Breeze Auckland team baked these yummy Christmas treats which were not only super delicious but it was also super easy to make!

Blondie Rocky Road

Ingredients:

  • Whittaker's Blondie chocolate
  • Malteasers
  • Marshmallows
  • Almonds

Method:

  1. Melt the Blondie chocolate. Add Maltesers, marshmallows, and almonds, and mix it.
  2. Set in the fridge and you've got the Blondie Rocky Road!

Christmas Crack

Ingredients: 

  • 9 Arnott’s Salada Crackers (half a box)
  • 225grms butter
  • 1C firmly packed brown sugar 
  • 400grams dark chocolate 
  • Crushed meringues and edible glitter for decoration

Method:

  1. Preheat oven to 180°
  2. Line a large roasting dish with nonstick baking paper. Place crackers in one layer so they completely cover the base of the dish. Snap them in half to make them fit if need be. Set aside. 
  3. In a medium saucepan, melt the butter and brown sugar over medium heat on the stovetop. Bring to a rolling boil. Reduce the heat to medium-low and continue to boil for 5 minutes, (set a timer) stirring frequently. Quickly pour over the crackers and spread to cover completely.
  4. Bake for five minutes in the oven or until the caramel turns bubbly and golden. It can burn quickly so don’t go far while it’s cooking. 
  5. Melt chocolate (I do it in the microwave for short bursts on 50% power)
  6. Remove caramel crackers from the oven and pour over chocolate - spread to cover. If you’re using chocolate chips, you won’t even need to melt them first, just pour them straight on the hot caramel crackers and they’ll instantly melt. 
  7. Before the chocolate sets, top with any additional toppings like crushed meringues, pistachios or Christmas-coloured sprinkles. A dusting of edible glitter always looks amazing, too! 
  8. Let it harden in the fridge for at least two hours then cut into squares or snap into pieces and enjoy!
