Jeanette Thomas from The Breeze Auckland made us the best Carrot Cake I have ever eaten (our whole team agreed). So I begged her for the recipe and here it is. Thanks JT !
Ingredients
2 cups of wholemeal flour
2 tsp Baking Soda
2 cups Raw Sugar
1/4 tsp salt
2 LARGE tsp cinnamon
1 cup orange juice /oil (2/3 orange & the rest olive oil)
4 lightly beaten eggs
3 cups of grated carrot
Method
1. Mix the dry ingredients
2. Add the orange juice, eggs and grated carrot. Mix them well.
3. Place the mixture into your cake tin. I used a 20cm square tin
4. Bake it on 180C for approximately an hour
For the Cream Cheese Icing
Ingredients
1 tub of cream cheese
Knob of butter
2 cups icing sugar
1 tsp vanilla essence
Method
Beat all ingredients together and spread them on the cake.
