Salsa Chicken & Cheese Tortillas

Great way to use leftover chicken! A frugal way with leftovers.

  • 4 Tbsp of Jar Salsa (hot if you can handle it) 
  • 2 Large Tortilla
  • can of kidney beans drained and roughly mashed 
  • 1 spring onion chopped
  • 50 gms leftover chicken,shredded
  • 85 gms grated cheese
  • 10 gms of chopped coriander(leave it out if you're not a fan) 
  • oil 

Spread 2 Tbsp of the salsa on each tortilla. Top one with the beans ,spring onion , chicken and cheese. Scatter with the coriander . Sandwich with the other tortilla. brush with oil. Heat a large non stick pan and cook ouil side down for about 4 mins. Carefully turn it over and cook for couple of mins on the other side until golden. Cut into wedges and serve.
