Vegetarian Sheperd's Pie

I reckon your meat loving friends won't know this is a vegetarian dish . Definitely needs the yummy potato top.

REMEMBER read the recipe so you know where you're going. Something I've learned....many times! 

About 4-6 main servings depending on how greedy everyone is ! 

  • 6 medium size potatoes,about 1 kg 
  • 3 Tbsp of butter
  • 1 cup of grated cheese 
  • Some milk
  • 2 large onions diced
  • 2 Tbsp of butter
  • 1 capsicum (any colour) chopped into 1 cm chunks
  • 3 Tbsp plain flour
  • 1 tsp of vegetable stock powder
  • 1 tsp each of soy sauce,paprika,oregano,basil
  • 1 1/2 cups of water or beer or wine or a mixture of them 
  • 2 Tbsp tomato paste
  • 1 440gm can of red kidney beans

Peel the potatoes and simmer them until they are tender.

Drain and mash them with the first lot of butter,half of the cheese and enough milk so that it's a nice smooth consistency, smooth enough to spread. Give a good beating so it's fluffy and light.

Cook the onion in the second lot of butter in a large frypan or saucepan until its tender and a medium brown colour, then add the chopped capsicum,the flour and stir until the flour browns slightly. Add the rest of the ingredients except for the beans  and bring it to the boil stirring constantly drain the beans and add to the pan. 

In a pan about 20 x 25 cm (I like to line it with foil or baking paper to help at washing up time) Spread the mixture in the dish/pan . Then cover with the mashed potato. Sprinkle the other half of the cheese over the top. If you are not using this immediately then pop it in the Fridge. 

When you are ready to go cook it in the oven (uncovered) at 180c for 20-30 minutes. If you need to you can always grill at the end to brown the top. 

I  usually serve with a green vegetable,whatever is in season .... or cheapest if I'm honest.
