Sort of "Curry for a Crowd"

If you need to feed a crowd this is easy and tasty.

You can make it and keep in the fridge up to two days ahead and because of the flavourings it will improve on standing.

It's not an authentic curry but has a curry flavoured mix which is usually popular as it's not hot. I'm sure you can half this recipe successfully.

  • 2-3 kg of lean chuck or ​blade steak
  • 1/4 cup curry powder 
  • 1/4 cup of plain flour
  • 4 onions
  • 2 cloves of garlic
  • Oil
  • 1 packet of mushroom soup mix 
  • 1 packet of leek and potato mix
  • 1 Tbsp soy sauce 
  • 1/4 cup marmalade 
  • 1 cup fruit chutney 
  • Juice of 1 lemon 
  • 4-5 cups of water 
  • Turn your oven to 150c 

Trim the meat,removing fat and cut it into small even cubes. Then shake it in a large bag with the curry powder and flour . cut the onions into chunks the same size as the meat. Cut the garlic into thin slices. Then heat a little oil in a hot pan ,brown the meat in batches. With each batch add some onion and garlic mix. Don't rush this ! You are cooking for a crowd ! After each batch put the beef onion mix into a large casserole dish. If when you are the browning and the meat sticks to the pan add a bit of the water .

Once the meat onion mix is done in in the casserole dish,sprinkle the soup mix over and stir to combine.

In the pan we've use simmer the soy sauce,marmalade,chutney and any remaining water. When it's mixed evenly pour over the meat mixture. Add enough water so that al, the liquid just covers the meat 

Cover and cook for 2-3 hours until the meat is tender. 

What a great way to feed a crowd! 

Serve with a big bowl of rice and as many side dishes and salads as you fancy !
