Try NZ's best carrot dish, Ashlee's Carrot Souffle

Crowned this year's best carrot dish in New Zealand's carrot capital, Ohakune!

A Kiwi family’s secret ‘Carrot Soufflé' recipe has been crowned the country’s best dish at New Zealand’s first-ever carrot cook-off.

It was an old family recipe passed down through generations that Ashlee Douglas entered into a recent Bargain Box carrot competition hosted in NZ’s carrot capital, Ohakune.

Fellow competing carrot dishes included a ‘Sticky Carrot Pudding’, ‘Nana’s Carrot Cake’, and a ‘Thai Carrot Fritter’. However, it was the sweet and savory Carrot Soufflé that won the taste buds of the judging panel, which included Masterchef NZ winner and TV host Nadia Lim.

As part of winning first place, Ashlee’s family receives a year’s free Bargain Box, and their winning dish will also be featured in an upcoming Bargain Box.

“It’s an old family recipe my mum used to make, so it’s awesome to win, and obviously pretty amazing to get a whole year’s free Bargain Box, especially as we are a family of 5 with 3 kids,” says Ashlee. “But actually, the best reminder was just how important it is to slow down the rush of our lives, sit down, and enjoy food together.”

INGREDIENTS

  • Approx. 450g Carrot
  • 50g butter (melted)
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • Pinch of salt
  • 2 eggs
  • 25g plain flour
  • 80g sugar
  • ¾ teaspoon baking powder

METHOD

  1. Preheat oven to 175 o C bake
  2. Boil carrots in a pot until soft
  3. Drain carrots and place them in a blender, also add melted butter, vanilla extract, cinnamon, salt and eggs blend until smooth.
  4. Add flour, sugar and baking powder and blend until combined
  5. Empty mixture into baking dish. Bake until souffle is golden brown and bounces back when touched. Around half hour

Sprinkle with icing sugar, and best served hot with vanilla ice cream
