Recipe for Mulled Wine
Something I always used to enjoy about Christmas in the Northern Hemisphere was Christmas Drinks...you know, Mulled Wine, Egg Nog, those kind of things. But us Kiwis can't always enjoy a hot Christmas drink like that because it is Summertime when Santa comes for us!
But lets not miss out on these delicious recipes just because our Christmas is a hot one. Our mid-year winter is just as good a time as any to get some Mulled Wine simmering gently on the stove. And wow! This stuff is just delicious...Nothing will warm you up better or quicker than a good glass of spiced Mulled Wine.

INGREDIENTS
NB: please note that you don't need to buy expensive and often superfluous sachets/toddies etc. This way tastes better as you are using fresh stuff.
Serves 5 glasses
1 Bottle of cheap, but chunky Aussie red
1 orange, quartered, with cloves stuck in the skin
2 cinnamon sticks
5-6 gratings of whole nutmeg
1 bay leaf (optional)
brown sugar to taste
Splash of brandy or rum (optional)
DIRECTIONS
Put red wine, orange pieces, cinnamon sticks, nutmeg and bay leaf in a pan.
Warm, but do not boil. Keep warm for 5-10 minutes to let the flavours infuse.
When warm add brown sugar to sweetness you require.
Add a little brandy or rum if you desire for a little extra oomph.
Serve hot.
