Easy Summer Food

Easy Options to Enjoy

I just love throwing different products together to find something new to enjoy and if you want to combine a serving of great New Zealand Berries, with a few splashes from your alcohol cupboard, then I have a great new smoothie for you to enjoy – the Ruby Smoothie with a Twist. Strictly for the adults!!

Ruby Smoothie with a Twist:

250g mixed frozen berries                             200ml milk

2 parts Vanilla Vodka                                     1 part Malibu

1 x 330ml bottle Aroha Blackcurrant Elderflower Sparkle

Combine in your blender the mixed frozen berries, milk, Vanilla Vodka and Malibu and blend until smooth. Pour into large fluted glasses up to three-quarters full. Top up with the Blackcurrant Elderflower Sparkle and gently mix with Cocktail spoon. Adding the Elderflower Sparkle makes the drink light and fruity and very very refreshing on a hot summer’s afternoon – guaranteed to quench your thirst. Makes 4 drinks.

Aroha Elderflower Sparkle drinks available also as Original, Feijoa or Rhubarb.

As temperatures soar refreshing easy dishes are called for. Look in your fridge and try and create a big one dish option that includes your veges and your protein – here are a couple of examples :

·         Diced Venison Salami Salad - Chop into cubes your Premium Game Venison Salami, dice a red capsicum, 2 cooked potatoes, 2 tomatoes, 2 rashers of cooked Streaky Bacon, grate a carrot, torn lettuce leaves, chopped chives and seasoning. Spoon in your favourite mayonnaise and mix gently. Top with shaved Blue River Curio Bay Pecorino Cheese and serve.

·         Tomato Bacon Salad – place a mixture of sliced yellow & red tomatoes at the bottom of your dish, & scatter with a finely sliced red onion, chopped fresh basil and parsley. Crumble 4 slices of cooked Streaky Bacon and Blue River Brydone Blue Feta Cheese over the top and serve.
